This is one of those recipes that proves allergy-friendly doesn’t mean flavor-free…and I’m so thankful!
My favorite part of this recipe is that it includes a special way to “velvet” the chicken. It’s so simple, but such a nice way to soften the chicken and bring your cooking to the next, restaurant style level.

1 lb chicken breast or thighs, thinly sliced across the grain
½ tsp baking soda
1 tbsp water
Vegetables
1 cup broccoli florets
1 cup cauliflower florets
1 cup carrots, sliced
Sauce (Balanced & Savory)
2/3 cup coconut aminos
2/3 cup chicken broth (to softens and balances the flavor)
1 tsp arrowroot starch
½–1 tsp nutritional yeast (optional, subtle)
1 small clove garlic, finely minced (optional, adjust to tolerance)
For Cooking
1–2 tsp olive oil
Instructions
Step 1: Velvet the chicken
Cut your chicken in thin slices across the grain.
Toss the chicken slices with 1/2 tsp baking soda and 1 tbsp water, covering evenly.
Let rest for 15 minutes only.
Rinse thoroughly under cold water and pat very dry.
This step makes the chicken so tender and silky. It gives the chicken a really nice, soft restaurant texture.
Step 2: Prepare the vegetables
Steam broccoli, cauliflower, and carrots until just tender. You can do this in a pan or even use microwavable california veggie mix.
Set aside.
Step 3: Make the sauce
Whisk 2/3 cup coconut aminos, 2/3 cup chicken broth, 1 tsp arrowroot starch, ½–1 tsp nutritional yeast (if using), and 1 smal clove minced garlic until smooth.
Set aside and stir again before pouring.
Step 4: Cook the chicken
Heat 1-2 tsp olive oil in a large skillet over medium heat.
Add chicken in a single layer.
Cook 1–2 minutes per side, just until cooked through.
Remove chicken from the pan.
Step 5: Finish the stir-fry
Add vegetables to the pan and warm briefly.
Stir the sauce and pour it in.
Cook 30–60 seconds, until lightly glossy.
Return chicken to pan and gently toss.
Remove from heat.
